Poor Man's Pizzas

Poor Man’s Pizzas
- 24 crackers of your choice
- ¼ cup pizza sauce
- 24 slices vegan pepperoni or other “meat” topping of your choice
- 1 ½ cups finely shredded mozzarella-style vegan cheese
Top each cracker with some pizza sauce, pepperoni or other meat, and vegan cheese. Microwave for 1 minute or until the cheese is melted.
Makes 4 servings
Our Notes: We don’t just have pizza sauce sitting around, but I do keep spaghetti sauce for pasta. It worked just as well (I mean, both are tomato based), and the best part was it had chunky mushrooms in it. We used garden herb Triskets which really added to the flavor. Throwing spices into the sauce before topping the cracker could be a fine possibility, too. The crackers soggy get if you “over cheese” it, but that’s not entirely a bad thing. Makes a full meal quickly.
